BTW, if you prepare "brown butter" or ghee, the browning process makes it lactose free and really enhances the cookie flavor.
This is womderful. I love "eyeball" cooking, having learned how to make some things from my mother and grandmother that way. "Proportional receipe" is a great label for it too.
